The Backstory cocktail – Episode 7: That’s My Jam 

Drawing on Jason Bentley’s conversation with film-maker Darius Marder and composer Ludwig Göransson, this sweet and fruity cocktail mixes D’USSÉ VSOP cognac with pineapple syrup, apricot jam and soda, and is balanced with a squeeze of fresh lemon juice.


Ingredients
2 parts D’USSÉ VSOP 
1 tbsp apricot jam
½ part fresh lemon juice
½ part pineapple syrup
1 sprig of thyme 
Sparkling soda


Method
1. Muddle the thyme and lemon juice in a shaker. Add the apricot jam, pineapple syrup, D’USSÉ, and ice.
2. Shake well and strain into a crushed ice-filled rocks glass. Top with sparkling soda, then garnish with a pineapple chunk and some thyme.
