Phaidon presents a conversation between Osteria Francescana’s legendary chef, Massimo Bottura, and Emilia Terragni, Publisher at Phaidon and Editor of Bottura’s books, Bread Is Gold and Never Trust A Skinny Italian Chef. They discuss finding inspiration in lockdown, as well as Bottura’s Instagram Live hit series, Kitchen Quarantine, fighting waste from home, the truth about umami, and the exciting new tasting menu he’s developing.
