Three-Michelin-starred chef Dominique Crenn (Atelier Crenn, San Francisco) chats with chef Manoella Buffara (Manu, Curitiba in Brazil) about the state of the culinary industry and mentorship in the kitchen. They discuss everything from the California wildfires to their biodynamic farms, and align on their core shared beliefs – that ‘time is an ingredient’ and ‘food should not travel, you should travel for the food’.
