Happy Hour: bar takeover with Dante

Jamie Gordon, Director of Education at the legendary cafe, Dante, takes us through Italian history – which brought food, music and culture to the city – while making a Solera Negroni and Summer Punch. Over the last century, Dante has been a beacon for New York’s Italian community, expanding with a world-class bar programme and classic Italian dishes.
Solera Negroni
1 part Santa Teresa 1796 Solera Rum
¾ part Campari
¾ part Martini and Rossi Sweet Vermouth
1 bar spoon Oloroso sherry
Garnish with an orange wheel
Stir all ingredients with ice, and strain over fresh ice into a rocks glass.
Summer Punch
2 parts Bombay gin
.5 part St-Germain
Oleo saccharum
5 parts lemongrass tea
1 part sparkling water
Sweat pea tendrils
Cucumber slices
Ruby red grapefruit wheels
Nutmeg, grated
Fennel pollen
Giant ice mould
Build over large ice cubes in a punch bowl.
