Meet the Soho Sunset, the new cocktail in town

If there’s one thing we know about our members, it’s that they love a tequila-based cocktail (hello, Picante). So, with this knowledge, we’ve created a new drink that’s set to sit sunlounger-side all season long. Welcome, the Soho Sunset.
 
Already proving popular with our members, this tropical-inspired cocktail has a balance of sweetness (passion fruit liqueur), citrus with spiciness (Thai chilli blood orange syrup) and a smoky finish (mezcal), earning it the title of the ‘drink of the summer’.  

Created by DUMBO House Bar Manager Fabio A Perez Marte, the drink was inspired by his childhood in Dominican Republic. ‘I grew up eating passion fruit picked straight from a tree that my family had near our house,’ he says. ‘For me, passion fruit reminds me of my childhood and I think it’s delicious.’ It pulls through as one of the central flavours via Chinola liqueur.

But it doesn’t end there – the cocktail is so much more than a fruity refreshment. Marte chose to incorporate carrot juice to add a healthy element, alongside bringing ‘texture and complexity to the cocktail, combined with spice from the Thai chilli.’ And to ensure that you can continue the obsession when the seasons change, ‘the combination of tequila, mezcal and citrus makes the Soho Sunset the perfect cocktail to be enjoyed all year round, anywhere and at any time.’
