Later this month, Soho Farmhouse will host our annual Food Festival in partnership with Porsche. To celebrate this momentous gastronomic occasion (and to build up some delicious anticipation) we’ve asked a few of the most prominent chefs at the event to tell us what food means to them – and to share their ultimate comfort recipe, so we can try it too. 

Today, it’s the turn of Gareth Ward, chef and co-owner of Ynyshir, the most highly-awarded restaurant in Wales.

What’s your ultimate at-home comfort dish?
‘Daddy’s pasta! Gluten-free pasta (my daughter is gluten-free) – preferably twirl shaped – with shallots and garlic chopped to almost a mince and slowly cooked in loads of olive oil on a low temperature. Tinned tomatoes, tomato puree, tomato ketchup and salt to taste. Serve with rocket and parmesan over the top.’

When did you first fall in love with cooking?
‘When I left school at 16, I got a job in a kitchen, and just loved the discipline of it – and trying everything.’

What was the first dish you cooked for someone else?
‘I cooked my cousin and his first girlfriend a three-course meal a few months after starting my first job. I can’t really remember what it was, but probably scallops or something like that.’

If you had to pick a death-row meal, what would it be and why?
‘Sunday lunch.’

What are your three favourite ingredients to cook with and why?
‘Why have three favourites when you've got everything in the world to play with?’

Is there a dish you still struggle to get right at times?
‘Char siu pork – it's taken years to get that right.’

And finally, your ultimate comfort food that you don’t have to cook yourself?
‘Giant Wotsits.’
